The Beaufort is a member of the Gruyère family: in fact, it was called “the Prince of Gruyères” by Mr. Brillat Savarin.

Beaufort is very appreciated for its fruity flavour and its creaminess, and is thus a cheese with a marked taste, without being overpoweringly strong. An indicator for the high quality are small cracks in the paste. The flavour of this hard cheese is delicate and fullbodied. Matured from 12 to 20 months.
